Sul finire degli anni Quaranta, in un paesino del Grande Nord della Svezia, s'incontrano due singolari personaggi: un venditore di prodotti tessili dall'identità sospetta - potrebbe trattarsi del gerarca nazista Martin Bormann in fuga dalla Germania - giunto da sud, e un maestro elementare. I due scoprono di condividere numerose passioni: oltre alla musica e al canto, li unisce anche l'interesse per la pölsa, piatto locale che li ha stregati al punto di decidere di adoperarsi per riuscire a carpirne ogni segreto. Iniziano così un viaggio che li porterà in tutto il Västerbotten dove, assaggiando e confrontando le specialità preparate nei diversi villaggi, cercano di arrivare a scoprire le caratteristiche della pölsa perfetta.
