Red gram [Cajanus cajan (L.)] is an important pulse crop in India. It is a protein rich staple food. Instant food means simple, fast and convenient food which is easy and fast to prepare. The attempts were made to prepare instant whole legume: Pigeonpea. The instant dhal was analyzed for their physical, instant and sensory characteristics. From the sensory evaluation of cooked dhal, reconstituted instant dhal and reconstituted control dhal, instant dhal and cooked dhal found to have same overall acceptability.
