From the Introduction: "In this book I have dealt with the question of menus, which are always difficult to work out, with the serving of wine, with serving at table and with the necessary materials and supplies for the kitchen. I have given practical and economic advice, explaining the whys and wherefores of carious cooking methods. In a word, I have tried, in the pages which follow, to remain the teacher I have been to thousands of pupils during the last thirty years. I have also given some forty menus, selected from these pages, some suitable for every day use, others for small but special dinners, others for receptions and ceremonial banquets. Good entertaining is one of the housewife's duties. To help her in this task I have added some more extravagant dishes to each chapter. Moreover, to make the explanation clearer, colour plates of the major dishes have been inserted, which will certainly encourage readers to complete their dishes to their entire satisfaction. I have tried to produce a work of lasting value in a field which is overcrowded, though rarely by qualified professionals. I was apprenticed in 1882 and never took off my white coat again; I did pastry-making, confectionary and cookery; I have practical experience of caning, ice-making, chocolate making, industrial biscuit-making. I therefore believe, without vanity, that I have the right to be called an all-round craftsman and to be qualified to teach the things I know, unlike the many charlatans who pose as professors of a science they have never learned. The recipes in this book have not been taken from my imagination. I have tried every one of them on the stove, and those for foreign dishes come from highly esteemed authors. Considerable space is given to ways of using up left-overs, a major factor in the domestic economy; and I believe I have fulfilled the aim I set myself when I started to write this book, that is, to give the housewife the most all-round training possible."
