Tra i bartender più celebri tra la fine del XIX e l'inizio del XX secolo c'è da annoverare sicuramente Harry Johnson, che possedeva e gestiva già all'epoca dei saloon negli Stati Uniti. Egli divenne famoso per due motivi: il primo è il suo manuale per migliorare la professionalità dei bartender, edito nel 1882. L'altro motivo è che Harry Johnson è stato sicuramente il primo a mettere per iscritto le istruzioni su come gestire un bar, aprendo la prima scuola per bartender del mondo, tanto da essere definito "il padre del bartender professionista". Il manuale inoltre contiene anche una raccolta di ricette tra quelle più in auge all'epoca, tra cui una le prime versioni del Martini e del Manhattan. Prefazione di Lucio Tucci.
