Asparagus has been until very recently one of the largest vegetable crops produced in Spain in terms of volume. However, in recent years area planted to asparagus has declined due to competition from imports. In 1994 asparagus area in Spain was estimated at hectares, continuing the downward production trend that began in 1991, when area peaked at a record hectares.
Spain's consumption of asparagus increased dramatically during the last decade, but has stabilized during the last few years. Consumption in 1994 is estimated at tons, down from tons in 1993. Declining demand for canned asparagus has been offset somewhat by an increase in consumption of both fresh and frozen asparagus.
